Parties & Purpose

Definitions

"Confidential Information" includes, without limitation.

  2. Tortilla production methods including corn masa formulations with lime-to-corn ratios for nixtamalization, flour tortilla recipes, pressing thickness standards, cooking surface temperatures, and proprietary equipment modifications.
  3. Protein preparation techniques including carne asada marination formulas, al pastor trompo seasoning and cooking protocols, carnitas braising specifications, barbacoa slow-cooking methods, and seafood taco preparation techniques.
  4. Financial data including food cost analyses by taco variety, protein cost fluctuation management strategies, average transaction values, catering pricing models, and revenue analytics by channel.
  5. Supplier information including dried chile sourcing contracts, specialty ingredient import arrangements for epazote, hoja santa, and specific masa harina brands, and fresh produce delivery agreements.
